Although they contain natural sugars, they are so delicious and nutritious. Just look at all the health benefits of the sweet purple beetroot…..

Beetroot dip

3 raw beetroot, (remove leaves and save for a salad)
2 tablespoons creme fraiche or yoghurt Small handful chopped fresh mint or 1 teaspoon dried

Few dashes of Tabasco
Squeeze of lemon juice & Salt to taste. Cook beets with skins intact in boiling water for about half hour, until soft.
Cool and dice. Place in a food processor with other ingredients and whizz to a chunky or smooth dip.

Broad bean dip

300g cooked broad beans
1 small clove garlic finely chopped
1/2 teaspoon dried or fresh chopped dill
1 teaspoon dried or fresh chopped parsley
A good glug olive oil & Salt and pepper to taste
Place all ingredients in a food processor and whizz until you like the consistency.

Pitta chips

Halve, split and quarter pittas. Place on a baking tray. drizzle with oil and sprinkle with paprika, cumin and salt to taste. Place in a pre heated oven at 180 degrees for about 20 mins or until golden and slightly crispy.
